This is our absolute go to salad for lunch, its easy, healthy and deliciously crunchy. And the best part is all the ingredients can be prepared a day in advance and just assembled on the day.
Preparation time: 30 minutes Cooking time: Only assembly time, about 10 minutes Serving: 4 people
Ingredients for the salad: 4 grilled chicken breast, cut into small blocks 2 avocados, cut into halves an sliced 1 cup chopped crispy bacon 1 cup crumbled feta 1 cup small tomatoes, sliced 1 red onion, chopped 1 cup frozen peas, defrosted 4 sundried tomatoes, chopped 2 sticks celery finely chopped 1 cup mixed herbs, chopped (coriander, mint, basil) 400g mixed salad lettuce 1 cup croutons 8 cucumber ribbons Maldon salt and pepper
Method for the salad: On a large serving platter, arrange the lettuce evenly on the bottom of the platter. Place the avocado on the sides of the lettuce. Now start by arranging your toppings on the lettuce, make sure that each ingredient is visible. Finish with chicken and the croutons and garnish with cucumber ribbons. Served with salad crème on the side and extra croutons.
Chefs note: It’s always a good idea to serve you salad dressing on the side. This way leftover salads can last longer in the fridge.
